Mini Rhubarb Pie and Baked Cheese Cake

I made mini pies with the first harvest of rhubarb I’ve had since a friend of mine gave me a rhubarb plant to share three years ago. I love this sweet and sour rhubarb pie. I love watching the rhubarb grow each summer, and it’s fun to imagine what kind of pie I’ll make next time.

And the Baked Cheese Cake, which uses a small amount of corn starch instead of flour, is a delight for my gluten-free and Keto diet friends.
